      The Guilbeault family moved from Montreal eight years ago and soon after decided to open their house to guests. Originally, they echoed Quebec's traditional Christmas Eve reveillon tourtiere, ragout of meatballs and pig's feet, and mincemeat - an English touch.
But Dominique, raised by a mother who experimented with a variety of foods, developed her own style of cooking from years of reading cookbooks. Now she serves festive meals with imaginatively seasoned dishes: roast duck and lamb, garden vegetables, berbs and apples. It's the fresh seasonal, local food that contemporary Quebecers look for when they dine out, she says.
